2 Eggs and an Avocado

Here is another great Cost-Conscious Meal. A dozen eggs can make for easy, cost-effective meals that can be very versatile and avocado adds a healthy amount of beneficial fats.

  • 2 large pasture-raised eggs, cooked to order (season to taste (eg. salt, pepper))
  • ½ ripe avocado, sliced
  • garnish of choice (eg. parsley, tomatoes)
  1. In a 10-inch skillet or frying pan, cook eggs according to preference.

  2. Slice the avocado and serve alongside the eggs.
